If I can I'll avoid class 5 bushwhacking. Rather than compile a list of what for me would be stuff to avoid doing how 'bout everybody's favourite? 99% of my whacks have been done in Canada but I particularly liked the Class1 from John's Brook to the base of the LWJ slide.
 
Doubletop, Lone, Friday, and Van Wyck, all 4 in the Catskills.
 
I think this is more of a scramble than a bushwhack but hey it's great. Plummer Peak in washington's cascades
 
On Santanoni, the hike up Ermine Brook to the base of the slide is one of the nicest bushwhacks I've ever done. The bushwhack from the top of the slide to the summit is the worst.

In the Five Ponds Wilderness, Cowhorn Junction to Clear Pond is a good one if you don't mind a little blowdown.
