Nice report.

The reason that the "Maple Ridge Trail" seemed like a backcountry ski trail is because you were actually on the Teardrop Trail, a CCC-era ski trail that is still maintained. :) It can be easy to miss the Maple Ridge Trail if it isn't recently broken, as the overwhelming majority of the winter traffic on that side is on the Teardrop and not the hiking trail.

Hmm... that's weird, then. We turned up off of the CCC road exactly at the Maple Ridge Trail sign. Are you saying we then veered off of the Maple Ridge Trail and onto a different route somewhere further uphill?

Yes, you did the teardrop - Maple Ridge wanders all over the place through thick woods and over short cliffs. It's easy to miss Maple Ridge at the bottom, I've done it before!
