My rule of thumb is to never freeze anything I plan to drink that day. Will add ice cubes to it though if possible.

About ten years ago I went on the eighth grade hike up Monadnock. One of the teachers told the students to freeze their water bottles. Sad to say the students that listened didn't have much to drink.
I tried it once many years ago. I don't recall if there was enough water available to drink, but I do remember condensate dripping on me much of the day. (IIRC, the bottle was in a pack sidepocket.)

When hiking in summer temps, I prefer ambient temp drinking water. (These days, I carry the bulk of my water in the main compartment of my pack so it is fairly well insulated from external heat.)
