So do the ones we already did in winter count? Or do we have to start over?
The short answer is, No. You do not need to reclimb any of the Catskill 35 peaks that you have already climbed in winter.

The Catskill 3500 Club, similar to the Adirondack 46ers, defines every winter season to be December 21 to March 21 inclusive, independent of the actual solstice and equinox. Further you only need to be at the summits during that period. You may start a hike earlier than December 21 and finish a hike after March21 if you are camping or engaging in night hiking. These points differ from the rules for the White Mountains, and other AMC administered New England lists.

The unique feature of the Catskill 3500 membership rules is that you must hike 4 designated peaks (Slide, Panther, Balsam, Blackhead) in the winter for the basic Catskill 3500 Club membership. Further you need to climb the 4 designated winter peaks twice for a total of 39 climbs (as stated on the tally sheet). The second climb of the 4 winter peaks may be in any season including winter.

You must also earn your basic Catskill 3500 membership in order to earn your Winter 35 patch.

The minimal effort for a winter 35 patch would be to hike all 39 climbs in the winter. You could then earn both the basic and winter Catskill 3500 membership patches concurrently.
